So, you know how our pre-frontal cortex is where higher cognitive functioning occurs and it is pretty much the area of our brain that allows us to make decisions, makes up our personality, pretty much defines who we are?

Well when we go into sujood, with our foreheads touching the ground, it is quite simply the only complete expression of submission. No other action encompasses submission better than that. 

Islam encourages logical understanding of religion and the PFC is generally your forehead area, where all your logical reasoning takes place.

Going into sujood you are acknowledging that you’re capable of logic and with that logic you’ve chosen to worship. Going into sujood you are giving up yourself, the entirety of your thoughts, actions, goals, emotions, everything that makes you, YOU— to Allah swt.
